What the so-called medical and nutritional authorities are telling you is that processed meat like "salami" is bad for you. Given the nitrates and nitrites added as preservatives to regular mass-market salami that become nitrosamines in your system as you digest products that contain them are known to cause cancer, you should stay away from any processed meat products that contains them. What we are not being told is that fermented and cured meat products like traditional salumi, prosciutto, coppa and others are actually good for your gut and your health. The natural probiotics (typically lactobacillus) in the fermented meat will colonize in your gut and help to maintain and restore a healthy gut biome. Our pre-industrial ancestors ate a lot of cured / fermented meat since it was the only way to preserve it. Today, in many of the Blue Zones around the globe, centenarians happily enjoy cured and fermented meat products and live healthy lives into very old age.
We are being told that the "Mediterranean Diet" is the gold standard - what we are not being told is that cured and fermented (not processed) meat without added nitrates and nitrites such as Prosciutto di Parma, Jamon and Salumi made the old fashioned way (like Angel's Salumi) is a staple of the Mediterranean Diet in Sardinia, Italy and France as well as Spain.
